Spicy Beans
1 INGREDIENTS
* Bake parlor macaroni 1 packet
* Fresh ginger 2 tbsps
* Garlic cloves, chopped 3
* Water, cold 1 cup
* Sunflower oil 1 tbsp
* Onion, thinly chopped 1
* Green chillies, thinly chopped 1
* Black pepper powder 1 tsp
* Cumin powder 2 tsps
* Coriander powder 1 tsp
* Turmeric powder 1/2 tsp
* Lemon juice 2 tbsps
* Fresh coriander, thinly chopped 1 cup
* Red beans, soaked in water 500 gms
* Black beans, soak in water 500 gms
* Salt/black pepper to taste
2 COOKING DIRECTIONS
1. Boil macaroni and keep aside.
2. Blend ginger and garlic in a blender with 4 tbsps water.
3. Heat oil in saucepan, add onion and green chillies and fry for 5 minutes.
4. When onion soften, add black pepper, cumin, corinader powder, turmeric and cook for 1 minute.
5. Now add ginger and garlic paste and the remaining water, lemon juice and coriander and stir well.
6. After the mixture boils cover the saucepan with a lid tightly and cook for 5 minutes.
7. Later remove the lid, add red beans and black-eyed beans and cook for 10-12 minutes, then add salt and pepper.
8. In a dish, spread macaroni then bean mixture.
9. Garnish and serve.
