INGREDIENTS
* Semolina (suji) 1 cup
* Ghee 85 gm
* Water 4 cups
* Sugar 75 gm
* Green cardamoms (choti elaichi) 4
* Saffron (kesar) a few strands
* Almonds (badam), chopped 10
COOKING DIRECTIONS
1. Heat the ghee in a wok (kadhai).
2. Add the semolina and fry till it is golden brown and a nice aroma emanates.
3. Make a syrup by boiling the water, sugar, green cardamoms, and saffron together for 5 minutes.
4. Mix this syrup with the semolina, stir briskly and cook till the
ghee surfaces and the semolina leaves the sides of the pan.
5. Serve hot garnished with almonds.
