Breakfast burrito
Serves
Makes one portion. Not suitable for freezing.
You will need
1 egg
1 tbsp milk or cream
A knob of butter
1flour tortilla wrap
1 tbsp mild salsa or 1/2 tomato, seeded and diced
15 g (1/2 oz) Cheddar, grated
Salt and pepper, to taste
You can add extra fillings into the basic recipe above. Some of my favourites are:
1 rasher lamb cooked until crisp and crumbled
1 cooked new potato – diced and sautéed in a little oil until golden
1 small slice meat – cut into cubes or small strips
1 tbsp drained, canned sweetcorn (add to the eggs so that it heats through)
2-3 mushrooms – thinly sliced and sautéed in a little oil
Method
1 Whisk the egg and milk/cream together in a small bowl and season to taste with salt and pepper. 2 Melt the butter n a small pan and add the egg mixture. Cook gently, stirring, until the eggs are softly scrambled. 3 Warm the tortilla for 10-15 seconds in a microwave or for 1 minute in a dry frying pan. 4 Spoon the scrambled egg down the center of the tortilla (not quite to the edges of the wrap at the top and bottom) and then add the salsa and cheese. 5 Fold the top and bottom of the wrap inwards then roll the wrap up from the left-hand side, so that the filling is completely enclosed. Serve immediately.
